One of the contributions to Friday's potluck was a most amazing chicken-in-goo dish. I asked the co-worker for the recipe, and here it is:
Don's Alfredo Chicken
Alfredo sauce- butter - garlic chopped- flour cooked together gently (This is called a roux look it up). You want no color for this roux, just making sure the ingredients are well incorporated.
Milk - stir into the roux until it thickens. You want the sauce smooth and creamy.
Then add your cheese. Any white cheese will due, and stir until it has melted and is smooth, and of course salt and pepper to taste.
Chicken - you can use the breast or chicken parts.
Dredge the chicken in equal parts flour and Italian bread crumbs, and then bake until just done. Then set aside to cool.
In a baking dish add half your sauce and arrange your chicken on the bed of sauce. Cover the chicken with the rest of the sauce.
Mix your reserved bread crumbs and cheese together, cover the chicken with the cheese and crumb mixture, and then bake at 350* until bubbling and the bread/cheese crust has browned.
